Made an old favorite from Blue Apron for dinner.  I stayed pretty true to the recipe although I didn’t add mint leaves and skipped the cabbage.  The cucumbers are more then enough to balance the saltiness from the meat.  I also don’t add the chile pepper but I think this dish works whether its spicy or not.

Only downside was that my peanuts were a bit rancid (i think) so it lent an off flavor to the dish.  They were easily picked off so it didn’t ruin dinner.

Here is the recipe from Blue Apron in case you want to try for yourself!   The more rare ingredients (Coconut Palm Sugar and Golden Mountain Sauce) can both be purchased on Amazon.

Sunset exploration ride

Went out today around sunset. It was a bit cool but otherwise a beautiful night. The sky was so pretty with shades of pink, purple and blue.  I did a bit of exploring but nothing too drastic

I biked with MapMyRide!
Distance: 7.57mi
time: 40:47
pace: 5:23min/mi
speed: 11.14mi/h.

Made a Blue Apron for dinner afterwards.  Crispy Tofu with Red Curry.  It was spicy  – almost too much – but the tofu was really good so I ate it.  I am looking forward to making more crispy tofu in the future but just with soy or miso sauce instead of the curry.

Pork Ramen

Just meh. The pork was pretty fatty so I had to trim a lot. It was also super messy to make but maybe that’s me.  I also didn’t think the eggplant was as good as earlier dishes in the season so maybe its almost done.  The rest was just ramen and broth and what could go wrong with that?  I do like corn in everything though – that has been very pleasant lately.

Easy (healthier) chocolate

Got this recipe from a YouTube channel we watch and The Other and I decided to try it.  Our first attempt turned out really great (although you definitely need silicone molds).  For the next batch we mixed in some addins – peanuts, marshmallows, cranberries, rice krispies, all in different combination and amounts.

The Other like the Marshmallow ones the best while I like the rice krispie ones.  Next time I would like to try some peppermint extract added.   You should definitely try this recipe!

Healthy Coconut Oil Chocolate

  • 1/2 cup coconut oil (cold press and virgin is healthiest)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or agave or maple syrup
  • 1/4 tsp sea salt

OPTIONAL:

  • 1 cup or less of additional add ins
  • sea salt for sprinkling on top

INSTRUCTIONS:

  1. Dump the coconut oil, cocoa powder, salt, and sweetener of choice into a non-stick pot.
    2. Mix together on low-medium heat until the sweetener is blended in thoroughly. You don’t need to cook anything, you’re just trying to melt it all together. Turn off the heat.
    3. If you are using a mould with details (like my Hello Kitty mould) chop the add-ins to make them finer so they don’t ruin the details of your mould. If you are using a generic shape mould, you can sprinkle in the add-ins without chopping them.
    4. Pour the chocolate into the moulds and place in the freezer for 15-30 minutes. The deeper the mould the longer it will take to cool off.
    5. Pop them out and enjoy! Keep all the chocolate in the fridge or else it will melt down. 😀

Dinner and a manicure

Made Fresh Lemon Linguine with summer vegetable sauce and seasoned ricotta tonight.  I think the most surprising thing was that there was no fresh lemon in it.   It was actually lemon infused pasta.

image

Overall it was pretty good,  even without the addition of fresh lemon but it is not my favorite lemon pasta dish I have made from Blue Apron. I think others have been better.

I did like the summer vegetable sauce as it taught me an easy way to make homemade tomatoe sauce. I didn’t realize it was so easy.  (Basically garlic, red onion, and tomato then simmer until thick and saucy)

image

I also painted my nails with the “comic book” nails.  I think it was OK for a first try,  need to work on my lines.  It’s hard to make a thin line on your nails with your good hand so your offhand is super tough. I’m liking the matte topcoat more than I expected!

Goat cheese and tomato pie

I’m not a huge fan of dessert pies but I do love me some savory pie. Tonight’s Blue Apron was just such a treat.

image

Tomatoes, goat cheese and sweet peppers among other ingredients made this a delicious treat.

2 slight issues – the recipe had you cook the pie for 22 min at 425 degrees which would have charred the whole thing.  Luckily I checked after 10 minutes and realized the issue with enough time to turn down the heat to finish it properly.

The second was that the chef of Blue Apron loves to use vinegar,  especially on onions,  which lead to this being a very acidic dish.

image

Overall pretty good, with a few adjustments I would make this again.

Crispy catfish and freekeh

image

Blue Apron tonight and I wasn’t really looking forward to it as I didn’t think I would like catfish.  It was much better than I thought which is why I love these Blue Apron meals – they allow me to try stuff outside my comfort zone.

Full meal was catfish, freekeh, and a corn-cherry tomato saute all garnished with marjoram.  One serving is 650 calories.

Zero calorie happy hippos

I love Kinder Happy Hippos. The chocolate ones are my favorite but I like the cream ones as well.  They are hard to find in America. I buy them off amazon.com and they are usually shipped from the UK

image

Only about 2 inches long they are filled with such yummy goodness that they are 120 calories each.  It’s worth it though, trust me.

I have been trying not to overdose on hippos and have been limiting myself to one after a bike ride as a quick carb boost (and much tastier then those gel boost packs they sell at the bike store).

image

Today though I was in a hippo mood so I had 3. Any guilt I might have had was forgotten upon eating that delicious happy hippo!

In the end I decided to go on a bike ride even though it was late at the very least to work off some energy. Then I realized that the calories I burned turned those 3  120 calorie hippos into 3 zero calorie hippos.  I love a good loophole 🙂

image

Seriously though, if you see these in the store, try them. You can thank me later!!!

Wok!

The Other got an outdoor wok station.  It is 168000 btus of woky goodness.

image

It cooks food so fast and since its outdoors there is less cleanup. (Kinda – still pans and dishes but no grease/oil splatter that typically happens during stir fry cooking)

image

The best food so far is the fried rice.  It’s pretty much restaurant quality.  I could eat it every night.

image

The Other tells me we are not limited to stir fry. We can make anything that requires a pan over heat!  (That’s a huge list! ) I’m told we can even deep fry. I’m just not sure if I should request cream cheese rangoons or french fries first.  Maybe deep fried oreos…
