Sunshine wine and dandelion gold

First outdoor ride of the season and although most of the paths around me are still flooded I was able to do almost 7 miles!  My legs were pretty good – not too tired thanks I assume to my indoor bicycle trainer.  However being out in the pollen was hell on my lungs!  I’m sure after a short adjustment period I will be back on track.

I biked with MapMyRide!
Distance: 6.64mi
time: 43:57
pace: 6:37min/mi
speed: 9.06mi/h.

For dinner I made the Blue Apron “Creamy Lemon Pasta” which turned out great.  I love lemon in pasta – its my new favorite thing.  I don’t think the spinach added anything but maybe I just chopped it too fine.  The garlic breadcrumbs were amazing though and very easy to make.  I recommend you try this recipe.

New crock pot, delicious dinner, and a better bike ride!

I have been doing some slow cooking lately and have been using this hand  me down crock pot which I think was actually from my Nana and Boppa.  It works but now that I have been doing this more, I can tell there are some things its missing.  For one, its small.  For two (and biggest) the interior is not removeable so you always have to wash it by hand. Boo!

The The Other told me that new crock pots are only $30 on amazon AND they have a removable dishwasher safe interior. Yay!!  Plus its larger! Double Yay! So I ordered one and it arrived yesterday.

For the first meal in my new crockpot I decided to make Mississippi Roast – simple and delicious.  Simply delicious. Seriously, if you own a slow cooker, you need to make this recipe.  Plus I think with only 3 ingredients, its counts as “Clean Eats” 🙂  Here is the recipe if you want to try it yourself, which you totally should.

The start of the meal:

4.5 hours later (on high)

I decided to serve it over egg noodles so here is the finished product.

So now that I have eaten all that deliciousness I decided to go for a bike ride. I’m lying – I rode my bike before I ate – after I ate I just laid on the couch 😛  But seriously I did ride my bike today, although indoors, but tried a different strategy which I think worked out great.  Instead of planning to ride 5 miles, I set a timer for 30 minutes then played a video of mountain bikers on the screen and listened to my audio book.  Since I wasn’t focuses on how many miles I had left to be finished the ride actually felt much shorter and I actually rode farther than 5 miles!

I am pretty proud of my steady pace as well.  Only one dip in the center there which is when the cats started fighting. Because of course they can’t let me exercise in peace.

Spiced Pork Chops and Mashed Potatoes

The Other and I made a Blue Apron tonight.  I am not usually a huge fan of pork chops but I am a sucker for mashed potatoes, peas, and goat cheese. In certain situations kale is alright too.

image

We decided not to put the spice mix on the pork chops, not because it was too spicy but because it had a licorice flavor (Ground Fennel), which I dislike.    Overall turned out better than I expected, and the pork chops had a nice flavor.

Good recipe, here it is if you want to try it yourself.

Double Blue Aprons all the way!

Tonight made two Blue Aprons, kinda by accident. I started with Sumac-Roasted Sweet Potato & Farro Salad and realized The Other would not like it.  Between the raw kale and ancient grains I knew this wasn’t a dish for him.

Conversely, we had a Hominy & Poblano Pepper Pozole recipe that I knew I probably wouldn’t like.  Although I love soup,  I’m not a big fan of Pozole, especially since it’s usually done spicy.

Both dishes came together pretty fast, and making the soup second probably helped the salad taste better since the ingredients had time to meld.

The Other said the soup was great – good flavors and not too spicy – and I really enjoyed the salad.  I liked the sumac sweet potatoes since that spice is a little sweet and added great flavor without being overpowering like brown sugar usually is. Overall two great meals that I would recommend.

For Christmas, The Other, got me the most coveted item on my wishlist. A Triumph Daytona 675R.  It finally came in last week and we went today to pick it up!

thumbs

It was a balmy 42 degrees F today but sunny so honestly not too bad.  Would I want to do this regularly? probably not, but it wasn’t the shiver-fest I was expecting.  Scott met me at the Harley shop (which also happens to be a Triumph dealer) to ride home.  It made what probably would have been a rush to get home into a pretty great ride.  We did stop for coffee once to warm up and rest but otherwise we rode straight through.  Regardless it was fantastic and I can’t wait for spring so I can ride regularly.  I was even thinking of taking it out tomorrow to fill it up with gas..

bike

This bike is completely different from the Spyder (which is still a great bike, don’t get me wrong).  Everything on the bike is made for performance so its not exactly make for cold weather and heavy boots and gloves.  It has features like a lap time and shift alert based on RPMs.  The sales guy said they do some track days (including track training) and invited me out so maybe I will try that and really see what this bike can do!!  It definitely likes to go fast – about 50 mph the bike really smoothes out.  So much fun!!

For dinner The Other and I made a Blue Apron recipe “Chicken and Sage Biscuit Pot Pie”  which was perfect after a cold day of riding.  It was easy to put together and super delicious  – I would make this recipe again. I really liked that to make the biscuits you simple dropped the dough on the top of the filling mixture and then cooked in the oven for 12 minutes.  I also liked that the vegetables were large and roughly chopped.  Again, this was a fast quick saving tip that made everything come together faster.  The only thing we changed in this recipe was to make the Roux (flour/oil mix) in a separate pan before adding it to the pot of vegetables – I think any other way would have resulted in a mess and a watery sauce.

Made an old favorite from Blue Apron for dinner.  I stayed pretty true to the recipe although I didn’t add mint leaves and skipped the cabbage.  The cucumbers are more then enough to balance the saltiness from the meat.  I also don’t add the chile pepper but I think this dish works whether its spicy or not.

Only downside was that my peanuts were a bit rancid (i think) so it lent an off flavor to the dish.  They were easily picked off so it didn’t ruin dinner.

Here is the recipe from Blue Apron in case you want to try for yourself!   The more rare ingredients (Coconut Palm Sugar and Golden Mountain Sauce) can both be purchased on Amazon.

Pork Ramen

Just meh. The pork was pretty fatty so I had to trim a lot. It was also super messy to make but maybe that’s me.  I also didn’t think the eggplant was as good as earlier dishes in the season so maybe its almost done.  The rest was just ramen and broth and what could go wrong with that?  I do like corn in everything though – that has been very pleasant lately.

Easy (healthier) chocolate

Got this recipe from a YouTube channel we watch and The Other and I decided to try it.  Our first attempt turned out really great (although you definitely need silicone molds).  For the next batch we mixed in some addins – peanuts, marshmallows, cranberries, rice krispies, all in different combination and amounts.

The Other like the Marshmallow ones the best while I like the rice krispie ones.  Next time I would like to try some peppermint extract added.   You should definitely try this recipe!

Healthy Coconut Oil Chocolate

  • 1/2 cup coconut oil (cold press and virgin is healthiest)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or agave or maple syrup
  • 1/4 tsp sea salt

OPTIONAL:

  • 1 cup or less of additional add ins
  • sea salt for sprinkling on top

INSTRUCTIONS:

  1. Dump the coconut oil, cocoa powder, salt, and sweetener of choice into a non-stick pot.
    2. Mix together on low-medium heat until the sweetener is blended in thoroughly. You don’t need to cook anything, you’re just trying to melt it all together. Turn off the heat.
    3. If you are using a mould with details (like my Hello Kitty mould) chop the add-ins to make them finer so they don’t ruin the details of your mould. If you are using a generic shape mould, you can sprinkle in the add-ins without chopping them.
    4. Pour the chocolate into the moulds and place in the freezer for 15-30 minutes. The deeper the mould the longer it will take to cool off.
    5. Pop them out and enjoy! Keep all the chocolate in the fridge or else it will melt down. 😀

Dinner and a manicure

Made Fresh Lemon Linguine with summer vegetable sauce and seasoned ricotta tonight.  I think the most surprising thing was that there was no fresh lemon in it.   It was actually lemon infused pasta.

image

Overall it was pretty good,  even without the addition of fresh lemon but it is not my favorite lemon pasta dish I have made from Blue Apron. I think others have been better.

I did like the summer vegetable sauce as it taught me an easy way to make homemade tomatoe sauce. I didn’t realize it was so easy.  (Basically garlic, red onion, and tomato then simmer until thick and saucy)

I also painted my nails with the “comic book” nails.  I think it was OK for a first try,  need to work on my lines.  It’s hard to make a thin line on your nails with your good hand so your offhand is super tough. I’m liking the matte topcoat more than I expected!
